Savory Overnight Oats Porridge

1½ cup of boiling water
1 pack instant miso soup
½ cup of rolled oats
1 tbsp of chia seeds
1 dried shitake mushroom
- Toppings & Garnishes
2 inches of fresh scallion, chopped
drizzle of olive oil
drizzle of sesame oil
sprinkle of bawang goreng (fried shallots)
a dash of white pepper
Directions
- In a heat-proof bowl, combine the miso paste, rolled oats, chia seeds and shitake mushroom and hot water. Stir well, cover, and place into fridge overnight.
- The next morning, the porridge is ready to reheated or cold, depending on your preference.
- To garnish, drizzle the oils and fried shallots. Pepper to taste.
Notes
- Topping ideas:
– Toasted sesame seeds, or furakake.
– Pepper flakes — Italian crushed red peppers or togarashi
– Chilli oil
– Sprouts — daikon and radish sprouts work particularly well
– Eggs — poached, hard boiled or pickled are all lovely.
