Overnight Savory Oatmeal Porridge

Ingredients

  • 1½ cup of boiling water

  • 1 pack instant miso soup

  • ½ cup of rolled oats

  • 1 tbsp of chia seeds

  • 1 dried shitake mushroom

  • Toppings & Garnishes
  • 2 inches of fresh scallion, chopped

  • drizzle of olive oil

  • drizzle of sesame oil

  • sprinkle of bawang goreng (fried shallots)

  • a dash of white pepper

Directions

  • In a heat-proof bowl, combine the miso paste, rolled oats, chia seeds and shitake mushroom and hot water. Stir well, cover, and place into fridge overnight.
  • The next morning, the porridge is ready to reheated or cold, depending on your preference.
  • To garnish, drizzle the oils and fried shallots. Pepper to taste.

Notes

  • Topping ideas:
    – Toasted sesame seeds, or furakake.
    – Pepper flakes — Italian crushed red peppers or togarashi
    – Chilli oil
    – Sprouts — daikon and radish sprouts work particularly well
    – Eggs — poached, hard boiled or pickled are all lovely.
    – Pork Floss — a South-East-Asian favorite
